Portugueses Caldo Verde

• 2 tbsp olive oil
• 1 large onion
• 3 garlic cloves minced
• 8 medium potatoes, chopped
• 3 ½ cups chicken broth
• salt to taste
• 500 gm kale
1. Heat olive oil and cook onion and garlic till golden brown.
2. Add potatoes, broth ,salt, pepper and 3 cups water and bring to a boil and then simmer for about 20 minutes or until the potatoes are tender.
3. With potato masher, mash the potatoes in broth.
4. Stir in kale and simmer uncovered until tender.
5. Serve hot.
