Refreshing Tea

Serves 4
Ingredients
• 2 cups water
• 3 whole cloves
• 1 stick cinnamon
• 3 to 4 cardamom pods (cracked open)
• 1/4 cup loose black tea (or 4 tea bags)
• 2 cups milk
• 4 tbsp of sugar (or a little less)
Method
1. Bring water, cloves, cinnamon and cardamom to a boil.
2. Add tea and milk and bring to a boil.
3. When hot, strain and add sugar. Serve hot.

Almond Tea

Serves 2
Ingredients
• 1 1/2 cups water
• 2 tsp dried tea leaves or tea powder
• 1/2 cup whole milk
• 1-2 tsp sugar
• 2 tbsp. almonds (badam), finely powdered
Method

Mint Tea

Ingredients
• 1 cup fresh milk
• 2 cups water
• 1/2 tsp dried mint leaves
• 3 tbsp sugar
• 1/8 tsp Garam Masala 
• 3 full tsp fresh loose tea leaves (no bags)
Method
1. Put the milk, water, mint leaves, sugar, Garam Masala, and fresh tea leaves into a saucepan. Bring to a slow boil. When done, remove from heat and strain.

Soy Tea

Ingredients
• ½ cup soy milk
• ½ cup water
• 1 tsp black tea
• Pinch cardamom powder
• Pinch ginger powder
 
Method
1. Combine soy milk and water and bring to a boil.
2. Add tea and steep for 20 minutes.
3. Strain; add cardamom and ginger. Ginger can be omitted in summers.
