Tanzania’s Banana Soup

Serves 8
• 1 kg chicken
• 1/2 cup onions
• 3 medium potatoes
• 4 medium bananas
• 4 tbsp butter
• 1 cup coconut milk
• 8 cups water
• salt, black and red pepper to taste
1. Simmer chicken and onions with water, salt and peppers for about one hour.
2. After an hour, add potatoes and bananas and simmer until everything is completely tender.
3. Remove chicken and set aside.
4. Now cool, blend and sieve the remaining soup.
5. Add butter and coconut milk, bring to a boil and serve.
